1 pkg. of dried Great Northern Beans
1 1/2 - 2 tsp. salt
1/2 tsp baking soda
2-3 Tbsp. bacon grease
Note: If you do not have a ham hock, I use a couple strips of bacon.
**Ham Hock, if you have one leftover from a baked ham**
If you forget to soak your beans overnite in water (in the fridge) then I wash them real good, and pick out the bad ones. Rinse really good because there could be some small rocks in the dry beans.
If you forget to soak them, no worries! I rinse them real good and place them in a 2 qt. saucepan. Cover with water, and 1/2 tsp. baking soda and bring to a boil. Let the beans swell up, and shut off the heat. Place a lid on the saucepan and let them sit for about 20 minutes.
Pour off the water and place in the crockpot that you have already started to heat up with the ham hock and salt.
Start out with the crockpot on high the first hour, and then on low setting for the rest of the day. If you are not going to be home just cook on low. Stir them up so your salt will dissolve.
Enjoy this SOUTHERN tradition with some hot cornbread, and Chow-Chow if you have some!!!
