Banana Nut Bread II

This banana nut bread is made with sour cream

Ingredients

3 "RIPE" Bananas, preferably black.
1 1/2 cup butter, softened
1 cup sugar
2 large eggs
1 1/2 cup all-purpose flour
1 tsp. baking soda
1/2 tsp. salt
1/2 cup fresh sour cream
1 1/2 tsp. Mexican Vanilla, you can use reg. vanilla
1 cup chopped pecans or walnuts

Method

Mash the ripe bananas set aside.
Mix together butter, sugar and eggs.
In a a seperate bowl whisk together the flour, baking soda and salt.
Now, add the sour cream into the creamed butter mixture. Add the dry ingredients a little at a time. After all is well blended add the vanilla. Now add the mashed bananas, then the nuts. Grease a loaf pan with butter and dust with a little flour. Shake off remaining flour after the loaf pan is dusted.


Bake 325 degrees for 1 hour, or you may have to add a few minutes til done. Do not overcook. Cook til a light brown top.
