Sweet and Spicy Beef Meatballs

Ingredients

• 1 lb. extra lean grass fed ground beef
• ½ apple diced fine
• 1 jalapeno diced fine
• ¼ cup orange and yellow bell peppers diced fine
• 1 egg
• 1 tsp garlic
• 1 tsp parsley
• 1 tsp basil
• 1 ½ tsp sea salt
• ½ tsp pepper
• ¼ cup Coconut Aminos
• 3-4 green onions chopped fine (optional, for garnish)
• Olive oil , for cooking (or coconut oil)
Sauce
• ¼ cup Coconut Aminos Teriyaki Sauce
• 2 Tbsp Ghee (melted)
• 2 Tbsp Coconut Aminos

Method

1. Mix ground meat with all ingredients thoroughly (except the oil) and form into balls.
2. Heat a drizzle of olive or coconut oil in a medium pan over medium heat. Place meatballs into pan and cook 8-10 or until browned on both sides.
3. Remove from pan and place on a cookie sheet and bake at 400 degrees for approximately 20 minutes or until cooked thoroughly.
4. Garnish with chopped green onions (optional)
