Antonio’s Italian Dressing (Kind of)

Very close to what you get at Antonio's Pizza in Parma It took me a little while to get it just right but I think I got it :)


  • 1/3 c. EVOO
  • 1/3 c. Apple Cider Vinegar
  • 1/4 c. White Vinegar
  • 1/3 c. White granulated sugar
  • 1/4 t. Italian seasoning mix
  • a little water
  • a little lemon juice
  • pepperoni grease (optional of course but changes the color and texture)


Fry some pepperoni in a small saucepan until it starts to crisp up a little Remove pepperoni and set aside for the top of your salad Keep the small amount of oil left behind from the pepperoni Add all other ingredients and mix well

Its better to let it sit for a while so that the sugar completely dissolves Of course shaking immediately before use is necessary.
