Black Mocha Cake

Description

My favorite choc cake recipe. I got this recipe from Randa who found it in a Moosewood cookbook. Super easy, and you don't even need to use your mixer. It's great without any frosting, but for an indulgent treat, frost with mocha frosting.

Ingredients

  • 3/4 c unsweetened cocoa powder
  • 2 c sugar
  • 1 3/4 c unbleached white flour
  • 1 t baking powder
  • 1 t baking soda
  • 1 t salt
  • 1/2 c vegetable oil
  • 1 c fresh strong coffee, at room temp (I usually mix up some instant coffee)
  • 1 c milk, buttermilk, or yogurt
  • 2 eggs
  • 1 t vanilla

Method

Preheat oven to 350 degrees. Lightly butter or spray cake pan.

I large bowl:sift together cocoa, sugar, flour, baking soda, baking powder, and salt.

In other bowl: with whisk, beat together oil, coffee, milk (or yogurt), eggs, and vanilla.

Pour half of the wet ingredients into dry ingredients and mix until smooth. Add the remaining wet ingredients and stir until incorporated.

Pour batter into prepared pan(s). Bake for 20-40 minutes (see below) until knife comes out clean. Cool before frosting.
