Cranberry Relish

Cranberry Relish
Preparation time: 25 min. Cooking time: 10-15 min. Medium Serves: 10-12

side dish..great with Cornbread dressing

  • 1 pkg. fresh cranberries, washed, drain and grind up in the food processor.
  • 1 large apple (Red Delicious or Gala)
  • 1 large orange
  • 1 small can of crushed pineapples
  • 1 cup chopped pecans
  • 1 1/2 cups sugar (recipe calls for 2 cups, I cut it back)
  • 2 large boxes Raspberry jello
  • 2 cups boiling H20

Bring H20 to a boil. Add jello and sugar, stir til dissolved. Set aside to cool. Peel apple and orange. In the food processor chop up apple. Then add peeled orange in the food processor. Grind up the cranberries until they are no longer whole. In a bowl, place all fruit, and stir in cooled jello-sugar mixture and drained crushed pineapples.. *Sometimes I add my pineapple juice in the mixture.. Fold all in real well, and put in a clear bowl or clear mold.. Chill overnight if possible, or real early that morning, where it will all be well jelled by the mealtime that night. I make this every year at Thanksgiving and Christmas..goes great with Turkey and Dressing…..So good. Note: I got this recipe from Tommy Slayton’s Mother when I was a teenager. I was eating over the Holidays at my Aunt Ethel Forsyth’s house. Mrs. Slayton brought this particular dish and it was a hit…We fix it at the holidays every since.
