Crispy Caramel Corn out of Southern Living Cookbook

Preparation time: 10 minutes Cooking time: <1 hour Easy - for beginners Serves: 16 cups


Super easy, super addictive. Want a little sweet and fast. This is it.


  • 1 cup sugar, 1/2 cup butter or margarine, 1/2 cup light corn syrup, 1/2 tsp salt, 1 tsp valilla extract, 1/2 tsp baking soda, 2 (3 ounce) light butter microwave popcorn, popped


Stir together first 5 ingredients in a small saucepan; bring to a boil over medium heat, stirring constantly. Remove hot caramel from heat, and stir in baking soda.

Place half of the popcorn in a lightly greased roasting pan and half in another. (I just use one cause I’m lazy.) Pour hot caramel evenly over popcorn mixture; stir well with a lightly greased spatula.

Bake at 250 degrees for 1 hour, stirring every 15 minutes. Spread on wax paper to cool, breaking apart large clumps as popcorn cools.

I have reduced the baking time in half and sill had excellent results.

It’s fast and really easy caramel popcorn.
