Cuban Cucumber-Tomato Salad

A quick and versatile side dish, perfect for a hot summer day! Works especially well with sweet heirloom tomato varieties.


  • 1 English cucumber
  • 2 medium-sized tomatoes (plum or equivalent size)
  • 2 large cloves garlic
  • 1/3 cup olive oil
  • juice of 2 limes
  • 1/2 tsp salt
  • 1 tsp dried hot pepper flakes
    • Note: all quantities are estimates - I do not routinely measure ingredients.


Roast garlic for about 5 minutes at 400 degrees F. A toaster oven is ideal for this.

Partially peel cucumber, leaving strips of green along length. Cut cucumber in half lengthwise, and then into 1/2-inch slices. Cut tomatoes into wedges.

Finely mince roasted garlic, and combine with oil, lime juice, salt, and pepper flakes. Toss with cucumber and tomato.
