Daiquiri Dick’s Key Lime Pie

  • Base:
  • 1.5 C Graham Cracker Crumbs
  • 3 T Unsalted Butter, melted
  • (or one prepackaged graham cracker crust)
  • Filling:
  • 2 Key Limes, zested completely
  • 3 Egg Yolks
  • 2 Cans Sweetened Condensed Milk
  • 3/4 C + 2 t Fresh Lime Juice
  • Topping:
  • 1.5 C Sour Cream
  • 1/4 C Sugar
  • 1/2 t Vanilla extract


Preheat oven to 300 degrees.

Base: In a bowl combine melted butter with graham cracker crumbs. Mix well. Press into the bottom and sides of a 10" pie dish. Bake 15-20 mins. Allow to cool 10 mins.

Filling: Zest the washed limes into a bowl. Remove zest, mince into very small bits & return to bowl. Add remaining ingredients. Mix well. Pour into the pie pan. Bake at 300 for 15 mins. Remove from oven & allow to cool completely.

Topping: Reduce oven temperature to 200. Combine ingredients. Pour over cooled filling in a swirl. Gently spread out evenly over pie. Bake for 15-20 mins. Remove from oven. Cool completely and refrigerate.
