Jamie’s wicked shortbread

Preparation time: 10 Cooking time: 50 Serves: 12-24


Delicious, dead easy and with ingredients most of us have around the house!


  • 1/2 Cup of sugar
  • 1 Cup of room temperature butter
  • 2 Cups of sifted flour
  • 2/3 Cup of semolina (or you can substitute 1 Cup of cornstarch)


Preheat your oven to 300. Cream together your butter and sugar until smooth.
Add flour and semolina (or cornstarch) and mix with a spoon until smooth. Turn on to floured surface and knead with your hands until it becomes a smooth dough. Grease a 9 inch square pan with butter. Transfer dough into pan and push down with your fingers until evenly distributed. Prick dough all over with fork. Put in oven for 50 minutes or until lightly golden. While still warm, sprinkle generously with about 2 tablespoons of sugar. Let it cool slightly and then cut into 12 chunky pieces or 24 small squares.
