Salt Baked Pineapple

Warm Pineapple Dessert


  • 1 small pineapple
  • 1 1/2 cup coarse sea salt
  • 10-15 cloves
  • 2 egg whites
  • 2 tbsp Chinese five spice
  • 3 tbsp mascarpone
  • 2 tbsp shredded basil


Pre-heat oven to 375 degrees.

Stud the pineapple with the cloves. Leave the skin and leaves on the pineapple.

In a bowl, combine sea salt, egg whites, and the chinese five spice.

Pack the salt mixture around the pineapple skin, covering as much as possible. The leaves are a good leverage point for maneuvering the pineapple. Use any remaining salt to form a ‘stand’ in a pan for the pineapple.

Bake for 20 minutes.

Crack the salt crust on the pineapple. Serve slices of warm pineapple with the mascarpone mixed with basil.
