Langostinos w/ Parsley Penne in Creamy White Garlic Sauce

Description

The mini langostinos are a special treat, so convenient in the frozen seafood sections of both Costco & Trader Joe's. Recipe uses right from freezer to pan, so no defrost time! (Also contributes to garlic sauce for added liquid during cooking.) Enjoy!

Ingredients

  • 8 oz. frozen langostinos (Costco’s or Trader Joe’s)
  • 10 small brussel sprouts (or sliced fresh leeks)
  • 1 large shallot
  • 3 large garlic cloves, sliced
  • 1 cup dry penne, cooked al dente
  • Butter/ extra light virgin olive oil
  • fresh parsley, snipped
  • 1/3 c cream cheese
  • chablis blanc and/or splash of fresh clam juice (optional)
  • 1 large lemon, room temperature
  • lemon-pepper seasoning (salt-free)
  • freshly cracked peppercorn medley
  • shaved parmesan
  • Progresso It. Style Bread Crumbs

Method

Lightly saute shallots + quartered brussel sprouts (or sliced leeks) in half butter/ half olive oil mixture for about 2 mins. Add sliced garlic, saute another minute or 2… then chablis blanc (and/or clam juice) to deglaze pan scraping up tiny bits. Add frozen langostinos to pan lightly browning another couple minutes, turning once, squeeze fresh lemon over langostinos. When reduced by half, swirl in cream cheese until melted.

(Be careful not to overcook langostinos as their meat may become tough & chewy.)

Ladle over cooked penne.

Season w/ lemon-pepper, cracked peppercorns, snipped parsley. Shave fresh parmesan. Let sit 5 min. Dust top w/ Progresso bread crumbs.
