Lemon-Coconut Layer Bars

  • 6 T. butter, melted
  • 2 c. vanilla wafer crumbs
  • 1 (8 oz) pkg. cream cheese, softened
  • 1 T. lemon peel, grated
  • 3 T. lemon juice
  • 1 egg
  • 1 c. white chocolate chips (about 6 oz)
  • 1 c. sweetened flaked coconut
  • 1/3 c. macadamia nuts, chopped


Preheat oven to 350 degrees F. Stir together butter and vanilla wafer crumbs in a medium bowl. Press crumb mixture firmly in bottom of 13 x 9 inch baking dish.

Place cream cheese, lemon peel, egg and lemon juice in bowl of electric stand mixer. Beat on medium low until smooth. Spread evenly over crumb mixture.

Layer evenly with chips, coconut and nuts; press down firmly with fork.

Bake 25 to 30 minutes or until lightly browned. Cool completely. Cut into 4 rows by 8 rows. Cover and refrigerate until ready to serve.
