Lentil Leek and Mushroom Loaf
Cooking time: 45mins Easy - for beginners


This is one of Lisa's greta recipes!


  • 1 T olive oil
  • 1 leek, finely chopped
  • 150g mixed mushrooms finely chopped
  • 2 x 400g can lentils, drained and rinsed, 1 can mashed with 1/4 cup water
  • 2/3 cup oats
  • 1/4 cup low cal ricotta
  • 1 egg
  • 1 T lemon juice
  • 1/2 cup freshly chopped parsley
  • 1 t curry powder
  • black pepper


Oven at 180 c. Lightly grease a 25cm x 11cm loaf pan. Heat oil in a frying pan and cook mushrooms and leek for 10 mins till softened. Transfer to a bowl. Add lentils, oats, ricotta,egg, lemon juice, parsley, and curry powder. Season with pepper and mix. Spoon mixture in loaf tin. Cook for 45 mins. Stand for 5 mins before slicing.
