Loon Cafe Pecos River Red Chili Recipe

Easy - for beginners

  • 5 cups diced lean sirloin
  • 1 medium diced onion
  • 2 cups Diced green chili’s
  • 2 cup Tomato sauce
  • 4 Tbsp Paprika
  • 2 1/2 tsp Ground cumin
  • pinch salt
  • 1 3/4 tsp Oregano
  • 3/4 tsp Cayenne
  • 2 1/2 tsp Chili powder
  • 1 cup Strong chicken stock
  • 4 Tbsp Masa (corn flour)
  • 1/2 cup Water to form a smooth paste.


Brown serloin, diced onions, and green chili’s in heavy pot

Add tomato sauce and spices and the let simmer for 10 minutes

Create smooth paste with Corn Flour and Water.

Stir Masa Paste into the simmering chilli and meat until well blended.

Simmer on low heat for 30 minutes, until meat is tender & serve. GARNISH with your favorites.

The Loon uses a dollop of sour cream, shredded cheese and chopped green onions - Serves 6 people.
