Manicotti with Meat Filling

from the Lancia Manicotti box. Makes 14 pieces.


  • 1 pkg manicotti pasta
  • 3/4 lb (375 g) lean ground beef, browned
  • 2 slices bread, cubed
  • 1/2 cup milk
  • 1 egg, beaten
  • 2 cups shredded mozzarella cheese
  • 1 tbsp chopped fresh Italian parsley
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 2 cans spaghetti sauce (680 mL cans)
  • 2 cups water
  • 2/3 cup grated parmesan cheese, divided


Cook manicotti according to pkg directions. Make sure to NOT overcook. Combine bread and milk and let stand 2 minutes. Add bread and milk mixture to browned ground beef. Stir in egg, mozzarella cheese, parsley, salt and pepper; set aside. Combine sauce and water. Spread 1 1/2 cups sauce mixture in each of 2 13 x 9-inch baking dishes. Fill manicotti with beef mixture and place seven in single layer on sauce in each dish. Cover with remaining sauce and top each dish with 1/3 cup Parmesan cheese. Bake, covered, at 350 degrees for 50 minutes.
