Moosewood Restaurant Cornbread

Preparation time: 15 min. Cooking time: 20 -25 min Easy - for beginners Serves: 8


A moist cornbread with a little sweetness to it.


  • 1 C. cornmeal
  • 1 C. whole wheat pastry flour or whole wheat flour
  • 2 t. baking powder
  • 1/2 t. baking soda
  • 1/2 t. salt
  • 2 eggs
  • 1/4 C. vegetable oil
  • 1/3 C. brown sugar, packed
  • 1 C. nonfat plain yogurt or buttermilk


Preheat oven to 400 degrees. Butter a 9-inch square or 7x11 baking dish.

Sift together the cornmeal, flour, baking powder, baking soda and salt in a large bowl. In a separate bowl, whisk together the egg, oil, brown sugar and yogurt or buttermilk. Make a well in the dry ingredients and stir in the wet ingredients until just blended; be careful not to overmix.

Spread the batter evenly in the prepared pan. Bake for 20 to 25 minutes, until golden brown and a knife inserted in the center comes out clean.
