Purple Gravy

A fine and tasty gravy that's perfect for roast pork


    • Olive Oil (for frying)
    • 1 clove Garlic (crushed)
    • 1 small Red Onion
    • 2 large Flat Mushrooms
    • 2 glasses Dry White Wine
    • 1 heaped tsp Cornflour
    • 1 heaped tsp Bisto


Heat some oil in the bottom of a small pan, crush the garlic into it. When the oil starts to sizzle add the Onion, then the mushroom and fry until glossy. Pour in the Wine and bring to a simmer.

In a cup mix the Cornflour & Bisto into a paste with some cold water, then add to the simmering pan. Stir until thickened.

I like to use Chilli Infused Olive Oil, but thats purely a matter of taste..
