Russian Fried Pasties

  • Bread Dough:
  • 2 ½ c. flour
  • 1 t. salt
  • 1 T. yeast
  • 2 T. butter
  • 1 c. milk
  • 2 T. sugar
  • Meat Mixture:
  • ½ lb (250g) Ground beef or pork
  • 2 T. Dried Parsley
  • 1/8 t. pepper
  • ½ c. onions, chopped
  • 1 can tomato sauce
  • ¼ t. salt
  • ¼ t. ginger
  • 1 t. cinnamon
  • 2 cloves garlic, minced
  • 2 T. parmesan cheese

Bread dough: In a mixing bowl combine flour and yeast. In sauce pan heat milk, salt, butter and sugar just until warm and butter is melted. Add milk to flour mixture scrapping sides of bowl. Knead and add flour to make moderately stiff dough. Lightly grease a bowl and add dough turning once to grease the surface. Cover and let rise in a warm place for 1 hour.

Meat Mixture: In a skillet cook ground beef or pork with onion and garlic until meat is browned and onion is tender. Drain off fat. Stir in tomato sauce, cheese, parsley, salt, ginger, and cinnamon. Heat thru.

Punch down dough, turn out on a lightly flour surface. Form 10-12 balls. To make pastries, place each ball of dough on a lightly floured surface and roll out to about 5 inches in diameter. Place about 2 T. of meat mixture in the middle of the circle and fold dough over and press to seal each pastry.

In a 12-inch skillet heat cooking oil over medium heat and fry each pastry seam side down in hot oil. Reduce heat to low, cover and cook 8-10 mins or until crispy. You can also bake them at 350 degrees for 20-25 minutes or until done.
