Makes: 4 Stuffed Filets Total Time: 1 Hour e Saute bacon until crisp, add garlic, spinach and sherry Right before you’re ready to stuff the filets, add the blue cheese, thyme and salt and pepper
For the Filets ” Tie and Sear; Cut Pockets in the filets (this is shown step by step in the Cuisine at Home December 2005, Issue 54, p. 10)
Stuff Filling into Filets; Top with: 2 T. Parmesan cheese, shredded
Place filets on grill and cook to desired doneness.
