Squash Casserole

  • 2 cups yellow squash
  • 2 cups Corn Bread
  • (I save my leftover Cornbread for this recipe or you will have to make a small skillet of cornbread).
  • 1 stick margarine or butter, melted
  • 1 can Cream of Chicken soup
  • 3-4 Tbsp. white finely chopped onion
  • Coarse Black pepper to taste


Steam yellow squash til tender, drain any liquid off. Add in a bowl squash, cornbread, melted butter, onion and cream of chicken soup. Black pepper to taste…

Place in a Pyrex bowl. Bake 350 degrees for 30 minutes.

Taste like Cornbread Dressing…really good and quick!
