Recreate your favorite mall-style bourbon chicken at home with this incredibly easy recipe, perfect for your Deep Covered Baker and finishing on a grill pan. This quick and flavorful microwave chicken dish delivers tender chicken breasts with a rich bourbon glaze, making it a delicious weeknight meal or family dinner.
Place chicken breasts in Deep Covered Baker (DCB). In a small bowl combine the ginger, soy sauce, onion flakes, sugar, bourbon and garlic powder. Mix together and pour mixture over chicken. Cover dish and place in microwave.
Cook for 6.5 minutes. Turn Chicken over. Cover. Cook for remaining 6.5 minutes. (Based on 1.65lb chicken. Cooking time depends on weight and wattage of microwave)
Pull DCB out of microwave with thick oven mitts. Feel free to eat at this point OR Continue….
Heat up Grill Pan and press. Place chix in pan and sear on both sides. While chix is searing, put juices (from DCB) into a small pot for gravy. Add whichever thickening agent you prefer. I use flour. Once Chicken has nice grill marks, serve it up with your sauce and whatever side dish you’d like such as rice or pasta. Enjoy!!
