Cookie dough with prune filling rolled up. Chill, slice and bake.
For filling combine prunes, 1/3 cup sugar and 1/2 cup water.Bring to boiling, reduce heat cook and stir 2minutes or till thick. Stir in lemon juice and 1/2 teaspoon vanilla, cool.
In a large mixing bowl beat shortening and butter, add 1/2 cup sugar, brown sugar, baking soda and salt. Beat till combined then add egg, milk and 1 tsp vanilla mix well.Beat in flour.
Divide dough in half and chill at least 1 hour. Roll half dough between stick resistant rolling mats or wax paper into a 12x10 inch rectangle. Spread with half of the filling and roll up tight and wrap with plastic wrap. Repeat with remaining dough and filling. Chill 2-24 hour or until needed.
Grease cookies sheet. Cut rolls into 1/4 inch slices. Place slices 1 inch apart on cookie sheet. Optional sprinkle with sugar on top. Bake in 375degree oven 8-10 minutes. Makes 64 cookies
