Spelt Batter

Preparation time: 10m Cooking time: 5m Easy - for beginners Serves: 4


A wheat-free, yeast free batter that is crisp and golden brown and extremely tasty.


  • 1 Cup Unbleached White Spelt Flour
  • 1/2 Cup Soda or Sparkling Mineral Water (Unflavored!)
  • 1 Cup Water
  • 1 1/2 Tsp of Podrovka Powdered Vegetable Stock or other yeast free stock
  • 1 Tsp Gluten Free Baking Powder
  • Pepper to taste


Add all dry ingredients into a large mixing bowl Add mineral water slowly, a bit at a time while stirring. Once used, add the normal water a bit at a time and continue to stir until the consistency of a smooth pancake mixture is achieved.

Allow to stand for at least 10 minutes before use.

Excellent for tempura style vegetables, and fish.
