Easy Make-Ahead Curry Pasta Salad - Vegetarian BBQ Side

Description

This easy and flavorful curry pasta salad is perfect for any occasion, especially BBQs and potlucks. Best when made ahead of time and chilled, this vegetarian side dish combines pasta shells with a unique sweet and tangy curry dressing, fresh vegetables, and a hint of spice. A crowd-pleasing salad that's loved by everyone!

Ingredients

  • 1 Bag (500 g) Pasta Shells (small shells)
  • 1 Big Sweet Onion
  • 1 Big Green Pepper
  • SAUCE:
  • 250 ml (1 cup) Tomato sauce/Ketchup
  • 160 g/200 ml (¾ cup) Sugar
  • 125 ml (½ cup) Sunflower oil (or your choice)
  • 125 ml (½ cup) White Vinegar
  • 25 ml (± 2 tablespoons) Curry Powder
  • 7 ml (1½ teaspoon) Salt
  • 2 ml (½ teaspoon) Black Pepper
  • 1 ml (± 13 drops) Tabasco Sauce

Method

Cook pasta in salt water until al dente and drain when cooked.

Cover with cold water.

Dice green pepper & onion into small pieces.

Mix all the other ingredients to make the sauce.

Drain the pasta and mix everything thoroughly into the pasta.

Refrigerate (It tastes even better the following day when the pasta has absorbed some of the sauce)
