Stewed Zucchini, Mexican-style (Calabacitas guisadas)
Preparation time: 20 Easy - for beginners Serves: 4-6



  • 1 tbsp Canola oil
  • 1 jar Veracruz Cooking Sauce
  • 3 Zucchinis, sliced in ¼ inch half-moons
  • 3 Yellow squash, sliced in ¼ inch half-moons
  • Salt to taste


¢ Heat oil in a saucepan over medium heat, add the Veracruz Cooking Sauce and cook for 2 minutes. Add the zucchini and squash slices and stir gently. Cover and cook until zucchini and squash are tender, 8 to 10 minutes. Remove from heat, season with salt. Enjoy!

Tip: Serve as an appetizer or a side. Goes great with grilled meats.
